This traditional technique, called co-milling or agrumato, captures the essential oils from fresh lemon peel at the exact moment they're released during crushing. The result is brighter, more natural citrus flavor than any infusion could achieve.
Why co-milling matters: When you crush lemons and olives together, the lemon's essential oils bind with the olive oil as it's being extracted – creating a permanent fusion of flavors that won't separate or fade like post-production infusions.
