What's the difference between Nobile and Gentile EVOO?

Which olive oil is best if I'm new to premium EVOO?

What does "cold-pressed within 12 hours" mean?
It means our olives are pressed within 12 hours of harvest, helping preserve their natural freshness, aroma, antioxidants, and flavor.
What does the acidity level mean?
Acidity is one indicator of olive oil quality. Our oils range from approximately 0.18% to 0.20%, well below the legal maximum of 0.8% required for extra virgin olive oil, reflecting exceptional freshness and careful production.
What are Gentile Nera olives?
Gentile Nera di Colletorto is a rare Italian olive variety cultivated by only a small number of farms worldwide. It produces distinctive oils with exceptional flavor and character.
Should I choose a bottle or a 5L tin?

Why do early harvest and late harvest olive oils taste different?
Early harvest olives produce oils with brighter, greener, and pepperier flavors, while later-harvest olives create smoother, milder, and more buttery oils. Both come from the same olive variety but are harvested at different stages of ripeness.
