The authentic way to make lemon oil. Our lemon EVOO isn't infused after pressing – we mill whole Sicilian lemons together with our Gentile Nera olives in a single cold-press extraction. This traditional technique, called co-milling or agrumato, captures the essential oils from fresh lemon peel at the exact moment they're released during crushing. The result is brighter, more natural citrus flavor than any infusion could achieve.

Why co-milling matters: When you crush lemons and olives together, the lemon's essential oils bind with the olive oil as it's being extracted – creating a permanent fusion of flavors that won't separate or fade like post-production infusions. You get the pure, vibrant essence of Sicilian lemon without any bitterness, acidity, or chemical aftertaste. Just clean citrus brightness that tastes like you squeezed a lemon directly into fresh-pressed olive oil.

Why Sicilian lemons: Sicily's volcanic soil and intense Mediterranean sun produce lemons with exceptionally thick, fragrant peels packed with aromatic oils. These are the lemons we mill whole – peel, pith, and all – alongside our olives. The terroir comes through: sunshine, sea air, and that unmistakable Sicilian citrus intensity.

How to use it: The most versatile oil we make. Unlike herb-infused oils, lemon can handle gentle cooking – the citrus oils are naturally bound to the olive oil during milling, making them more heat-stable. Perfect for: grilled fish, roasted chicken, asparagus, green salads, pasta with seafood, risotto, roasted vegetables. Even baking – lemon olive oil cakes are extraordinary. Some customers drizzle it over morning yogurt or use it to finish soups. The 250ml bottle goes fast once you discover how often you reach for it; the 100ml is perfect for testing before committing.

Storage note: Co-milled citrus oils are more stable than infusions because the flavors are integrated during pressing, not added afterward. Best consumed within 12 months of opening for peak brightness. Store in a cool, dark place.
