Our smoothest oil, in the size for cooks who use it every day.
Gentile comes from the same Gentile Nera olives of Colletorto, in Molise, as our Nobile, but we harvest them later, in November, when they're fully ripe. We mill them at our family mill within 12 hours of picking, with cold extraction below 27 °C (81 °F).
The result is a soft, rounded extra virgin olive oil with a sweet fruitiness and hints of almond. It has slightly fewer polyphenols than Nobile and a gentler finish, which makes it the oil for everyday cooking: sautéing, baking, fish, eggs and fresh cheese.
Who it's for: families who cook every day, small restaurants that want consistent quality, and anyone who has found their everyday oil and doesn't want to keep reordering. With regular use, 5 litres last about 6 months.
Why choose it
✓ Single-variety Gentile Nera of Colletorto, late harvest
✓ Cold extracted within 12 hours of harvest, below 27 °C
✓ Acidity between 0.15 and 0.2% (the legal limit for extra virgin is 0.8%)
✓ Never blended: only olives from around Colletorto
✓ Smoke point of about 220 °C (428 °F): for raw use and cooking, frying included
Why the 5 litre tin
✓ Costs less than five 1 litre bottles
✓ The tin protects the oil from light and air better than a bottle
✓ About 100 salads or 65 pasta dishes for 4 people
How to store it
Sealed, cool and dark, the tin keeps for 18 months. Once opened, decant a little at a time into a dark glass bottle and keep the tin tightly closed. Use it within 6 months, or within 2–3 months in a hot climate like Singapore's.
